Prego® Good-For-You Stuffed Peppers

1/2 cup uncooked instant brown rice
1 lb. extra lean ground beef
1 jar (1 lb. 10 oz.) Prego® Heart Smart Traditional Italian Sauce
6 medium green peppers
1 cup fat-free shredded mozzarella cheese

  1. Cook rice without salt or butter according to package directions.
  2. Cook beef in 10” skillet over medium-high heat until beef is well browned, stirring to break up meat. Pour off fat. Stir 2 cups of sauce and rice into skillet.
  3. Cut each pepper in half lengthwise. Discard seeds and white membranes. Place pepper shells
    in a 17 x 11” roasting pan or the bottom of a broiler pan.
  4. Spoon beef mixture into pepper shells. Pour remaining sauce over peppers. Cover.
  5. Bake at 400°F. for 45 min. or until peppers are tender. Top with cheese.

1 tbsp. nonfat plain yogurt
1 1/2 tsp. light mayonnaise
2 tbsp. chopped celery
1 tbsp. finely chopped onion
1 can (3 oz.) Swanson® Premium White Chunk Chicken Breast in Water, drained
2 slices Pepperidge Farm® 100% Whole Wheat Thin Sliced Bread
1 slice tomato
1 lettuce leaf

  1. Stir yogurt, mayonnaise, celery, onion and chicken in bowl.
  2. Spoon chicken mixture on 1 bread slice.
  3. Top with tomato, lettuce and remaining bread slice.
